Texas Tortilla Pie (Kate)

A tegnapi pot luck party-n kostoltam ezt a finom, konnyen-gyorsan osszeallithato tex-mex pitet.

1 package Uncle Ben's Express Mexican Rice
1 can kidney, black, or pinto beans - drained
1 can sweet corn - drained
1 can or box chopped tomatoes
1 can each chopped green chilies and chopped olives - drained
1 chopped onion
1 tablespoon chili powder
1 teaspoon cumin
1/4 teaspoon cayenne pepper
Tortillas - flour or corn are good
2 cups grated cheese
avocado (optional)
sour cream (optional)

1) Cook rice according to package, set aside.

2) Preheat oven to 220. In a large bowl, combine beans, corn, tomatoes, chillies, olives, onion, and spices. Mix well.

3) Lay one tortilla at the bottom of a lasagne pan. Cover with one-fourth of the bean sauce and one-fourth of the cheese. Add another tortilla, one-fourth the bean sauce, all the rice, and one-fourth cheese. Keep layering tortilla, bean sauce, cheese till you get to thetop. The top layer should be cheese.

4) Back for 10 - 15 minutes until cheese is melted and pie is piping hot. Decorate the top with sliced avocado and pass a bowl of sourcream on the side.
