Tart Shell
175g plain flour
100g butter
25g caster sugar
1 egg yolk
zest of half a lemon

Combing flour and butter until it resembles course meal, add sugar and lemon zest, stir in egg yolk and enough water for form a ball, wrap in cling film and refrigerate. Roll out and pit in tart tin. Blind bake at 170 for 15 - 20 minutes.
Filling
25g icing sugar
275g mascarpone
150ml cream
half vanilla pod, scraped
zest of half an orange

Whip all ingredients together until the mix is the consistency of light whipped cream.
Layer into cooled tart shell, top with strawberries, paint with strawberry or redcurrant jam melted with a bit of water.
